When you're hungry in the morning or late at night and can't make it to the cafeteria, no worries! You'll still be able to eat breakfast, get your veggies and make some for your roommates too! Here's the recipe:
Prep time: 5 minutes
Cook time: 1/1 ½ minutes
2 large eggs
2 tsp milk or water
Pinch of salt
Pinch of ground black pepper
- Spray mug with nonstick cooking spray
- Whisk eggs, milk, salt and pepper until well blended (you can use a fork to do this).
- Microwave on high for 30 seconds. Stir. Microwave for another 30 to 45 seconds, or until eggs are puffed and set at the center.
You can add 1 or 2 tablespoons of herbs to the egg mixture before cooking.
You can add up to 2 tsp each of veggies, meats and cheese.
